Snack Seasoning Method
Snack consumption tends to increase along with the pandemic situation. Today, many people eat snacks while working at home. Come in many varieties of types, shapes and flavors make snacks easy to accept.
The taste of a snack is one of the important quality attributes. Generally, the taste of snacks is obtained from the seasoning. That’s why the Seasoning method is an important thing to do.
The method of snacks seasoning depends on the type of base/ main ingredient of the snack. There are three commonly used snack application methods:
- Dusting
Dusting is a snack seasoning method of evenly sprinkling seasoning powder onto the snack bases. The snack bases that are commonly used for this application method are fried bases, such as cassava chips, french fries, etc. Before the dusting process, the base must be freshly fried/ still hot so that the oil that is still attached to the base will help coat the seasoning on the surface of the base. - Oil Slurry
Oil slurry is a snack seasoning method where the snack base is coated with a mixture of seasoning and oil (the mixture is commonly called a slurry). Commonly, the ratio of oil and seasoning is 60:40. Then the oil and seasoning mixture is coated to the base snack. The coating percentage is generally around 25% -40% of the total base snack. The oil medium in the slurry is used to help absorb seasoning into the base pores. The type of snack base that is suitable for the oil slurry method is extrudates. - Sugar Coating
Sugar coating is a snack seasoning method where the base snack is coated with a mixture of sugar solution and seasoning. Commonly, the ratio of sugar solution and seasoning is 65:35. Then the sugar solution and seasoning are coated to the snack base. The coating percentage is generally around 15% of the total base snack. The base will be baked in the oven after being coated with the sugar coating method, so heat-resistance seasoning is needed. The types of snack bases that are often found with the sugar coating seasoning method are peanuts, cassava chips, chips, macaroni, popcorn etc.
